Grill Shak Smoked Tomato & Garlic Aioli Sauce
2 large Roma Tomatoes
1 medium Red Onion
1 head of Garlic
Olive Oil
2 Tbsp Big Dad’s Grill Dust
1.5 Tbsp Smoked Paprika
½ tsp Ground Cumin
1 tsp Chipotle Chili Powder
¾ cup Mayonnaise
1 can Chipotle Pepper in Adobo Sauce
Hot Pepper Sauce to taste
Instructions
Cut tomatoes and onion into quarters.
Cut top of garlic head off, exposing cloves.
Place tomatoes, onions, and garlic in foil pan.
Drizzle olive oil on garlic
Smoke at 250 degrees for 2 hours (or until tomato skins peel off and onion is soft).
Remove from smoker.
Squeeze garlic from the head and peal skin off of tomatoes.
Place all ingredients in blender or food processor and mix until smooth.
Add hot pepper sauce to taste.
